Why we don't see transitional organisms today

I was presented with a question by a creationist team with whom I have been arguing on-line about evolution.
Their question is
"why we don't see intermediate/ transitional animals in between mammals and birds or amphibians and mammals."
It seems it's kind of a "crocoduck" question, but I would be grateful if someone can provide examples for living "transitionary organisms" or an explanation as to why we cannot observe such organisms.
